Cottage cheese

Feed me some cheese.
Confession time: I have never, in my entire memory span, willingly eaten cottage cheese. Is that weird? I just never liked the look of it. I seem to be going through this experimental phase lately though, and I like just about every other soft cheese I’ve ever eaten… so the time is ripe. I bought me some cheese. Here’s the question though: How the heck do I eat it? Any really excellent ways of serving it? I’ve always seen it on salad bars but I’m not really sure what you’re supposed to do with it. Just plop it on with your salad? Mix fruit in it? Spread it on crackers? This isn’t strictly a diet-related request either, so don’t feel required to provide me with zero-Points recipes. I don’t plan on eating this stuff smeared on celery sticks.

  1. A lot of people just eat it plain. It’s pretty low fat and good protein. Also, some have been known to hollow out a melon and eat it like that. Or, people have it with pineapple a lot and other fruits. Personally, I’m not too much of a fan. Probably b/c it’s somewhat healthy. 😉

  2. I totally expected that you were going to say: “Also, some people have been known to eat it with RANCH DRESSING.” 🙂

    The Snook likes it with pineapple. I was just hoping to get a bit more creative.

  3. Everything you mentioned is a good way of eating it (in salad, on crackers, mixing it with fruit). I particularly like it on crackers with tomato and alfalfa.

  4. Pineapple may not be creative, but is definitely yummy. And when I was a kid I used to take it to school mixed with applesauce, which looked absolutely disgusting, but I loved it anyway. Until a fellow third-grader accused me of eating ‘throw-up’… ah, childhood memories.

  6. Grab a toast already spread with vegemite and butter then spread cottage cheese on top! Seriously.

  7. I love me some cottage cheese! I put a bit of pepper on top, and then eat it straight or on crackers. Plain saltines are good, or something like Wheat Thins. I don’t care for it *on* salad, but I always have some on the side if it’s available.

    I remember when I was a kid, there used to be these little single-serving containers of cottage cheese that had two sides — one filled with cottage cheese, natch, and one filled with fruit topping. My favorite was the blueberry one, but they also came in raspberry, apple, and pineapple. I wonder what happened to those things? They were awesome!

  9. in the spirit of the cottage cheese doubles marci mentioned, i have taken to mixing in a low sugar fruit jam (like strawberry) – it’s essentially the same thing, only cheaper!

  10. I baked a loaf of crusty bread last night to have for breakfast today. I meant to mix the cottage cheese with a diet jam, as Aim suggested, but… SMASH! Jam all over the floor. (I’m uncoordinated in the morning.) So I just spread on the cheese and added a little cracked black pepper as per Marci’s suggestion. Yum! I’m thinking of adding some sliced fresh tomato and basil tonight…

  12. I used to mix it with lowfat yogurt–the result was a pastel-colored mush that a friend called “space food,” but I got addicted to it.

    My main aversion to it isn’t taste-based, but rather texture. Once I get past that, I can deal.

  14. I used to by the kind with herbs mixed in it, and use it as a dip for crackers, but now I’m lactose intolerant so I can’t eat it anymore.

  15. I like green olives chopped up in it. Then just eat with a fork (or spoon).

  16. um- ok so this is totally gross, but my mom used to ake this for us all the time.

    1/2 cottage cheese, 1/2 applesauce with a bunch of cinnamon and sugar mixed together pretty well. It’s like candy. but strange looking

  17. I had the last bit of my carton – I’ve eaten my way through the whole first one! – with some low-sugar blackberry jam today and it was DELISH. I’m so going to have a blowout at weigh-in tonight…

  18. I am glad you ventured into the world of cottage cheese. I love cottage cheese! Eat it plain, with cucumbers, or I also eat it with tomatoes on top or peaches (yum). My dad always just put pepper on top. Some people substitute cottage cheese on a salad instead of using dressing….

    Here is a recipe that is really good (and fast), albeit a little unhealthy. One carton of cottage cheese, one can of crushed pineapple (drained), one small box of lime jello, and one container of cool whip. combine the dry jello with the cool whip (fully thawed). Drain the crushed pineapple, add to the jello mixture. Stir in cottage cheese. Eat. It is a desert with cottage cheese and lots of people seem to like it. We used to make and sell it in the delicatessen where I slaved away our high school years.

  19. The way I like it best is the Zone Breakfast Sundae (Dr. Barry Sears), which is hugely filling. You top 1 c lowfat cottage cheese with 12 toasted almonds; 1 large banana, sliced; and 1/2 cup fresh or frozen berries, thawed. You can also add vanilla extract and cinnamon to the cottage cheese or replace the banana with 1 cup sliced fresh strawberries. Simple and tasty.
